Our kitchen, under the direction of Mr. Diekmeier and sous chefs Mr. Miethke, is constantly evolving. We place great importance on sustainable, conscious, and light cuisine, with an increasing focus on vegetarian and vegan options. We preserve our classics while drawing inspiration from new ideas, combining regional roots with cosmopolitan cuisine. The seasons set the pace, and enjoyment is the focus, day after day.
Look forward to culinary theme weeks and seasonal highlights. We serve skrei in winter, while spring is accompanied by asparagus, rhubarb, and wild garlic, tender lamb, chanterelles, and porcini mushrooms. Summer is all about local game, while in fall you can expect pumpkin and aromatic cabbage dishes, followed by classic stews in the cold season.
